These days, dinner has to be a lot of things: quick and easy to make, relatively healthy, and very kid-friendly.  Our boys are downright picky, and it is truly a challenge to find something they’re willing to eat at dinner that isn’t yogurt or from the freezer.

I took on the Mueller’s “Tastes Like Home” Pasta challenge to create a home cooked “home-y” meal, and tried to think of a dish using the ingredients my picky eaters actually will eat (noodles, cheese) in combination with what works for me (something quick and delicious!) I’m not a chef by any stretch of the imagination, and really love meals that require minimal prep work and clean up (who has time for that anyway?)  What I love about this One Pot Pasta dish is that you can modify it however you’d like very easily to fit your family’s likes – from adding to meat or sausage to fresh tomatoes or shallots – it really is a great canvas to work with.

One Pot Pasta For the Pickiest Eaters

Prep Time: 5 – 10 minutes

Cook Time: 20 minutes

Serves 4 – 6

Ingredients:

– 1 box Mueller’s Thin Spaghetti

– 2 8 ounce cans of tomato sauce

– 2 tablespoons dried minced onion

– 4 garlic cloves sliced thin

– 2 teaspoons dried oregano

– 4 teaspoons dried basil

– 4 ½ cups stock of your choosing

– Drizzle of olive oil

– Cheese for topping (mine prefer shredded Mozzarella, easier for their little fingers to grab)

Directions:

– Start by putting your noodles, tomato sauce, minced onion, garlic, oregano and basil into a stock pot.

– Add stock, drizzle olive oil on top, cover and bring to a boil.

– Reduce heat, and keep it covered, stirring occasionally.

– Cook until the liquid has reduced down to about an inch (usually about 10 minutes or so).

– Add cheese and serve.
