schoolSchool is only DAYS away. Can you believe it mommas! If your house is anything like mine, I always go to bed with the good intentions of getting up at 5am so I can work out, shower and have breakfast on the table by the time my 19 month old early riser wakes up at the lovely hour of 6am (if not earlier). But most evenings I stay up way too late working or watching tv and enjoying the hour of not being on constant mommy call that it is very easy to make the excuse that I could really use that extra hour of sleep. So. If you are anything like me, you will appreciate these quick and easy back to school breakfast ideas! I love these breakfast ideas because you can make them the night before.

Cinnamon Bread

Batter:

–          1 cup butter, softened

–          2 cups sugar

–          2 eggs

–          2 cups buttermilk

–          4 cups flour

–          2 teaspoons baking soda

Cinnamon/sugar mixture:

–          2/3 cup sugar

–          2 teaspoons cinnamon

Directions

  1. Cream together butter, 2 cups of sugar and eggs. Add milk, flour and baking soda.
  2. Put ½ of the batter into greased loaf pans.
  3. Mix in separate bowl the 2/3 cup of sugar and cinnamon. Sprinkle ¾ of the cinnamon mixture on top of the ½ batter in each pan. Add remaining batter to the pans; sprinkle with the last of the cinnamon topping. Swirl with a knife.
  4. Bake at 350 degrees for 40 minutes or until toothpick tester comes clean.
  5. Cool in the pan for 20 minutes before removing from pan.

Serve with:

–          Fruit

–          A fruit smoothie

Kid friendly tips:

–          My daughter Hannah LOVES to bake. Her favorite part about this recipe is sprinkling the cinnamon/sugar mixture into the pan. I always let her do this part and never correct the recipe even  if ALL of the cinnamon/sugar mixture ends up in the middle of the bread (it still tastes great)!

–          Although a little bit messy, this is an easy take along breakfast if it is a crazy morning and the kids need to eat in the car. Throw the bread in a Ziploc bag, grab a banana and vacuum the car out later!

Apple Cinnamon Oatmeal Muffins

Ingredients:

–          1 ½ cup whole wheat flour

–          ½ cup rolled oats

–          1/3 cup light brown sugar, packed

–          1/3 cup sugar

–          Cinnamon to taste

–          2 teaspoons baking powder

–          ½ teaspoon salt

–          2/3 cup milk

–          ½ cup oil

–          2 eggs, lightly beaten

–          1 teaspoon vanilla

–          1 ½ -2 cups chopped apples

Directions:

  1. Preheat oven to 400 degrees and grease muffin pan
  2. In a large bowl, stir together flour, oats, sugars, cinnamon, baking powder and salt.
  3. In another bowl, stir together milk, eggs, oil and vanilla until blended. Make a well in the ingredients and add the wet ingredients, stirring just to combine. Stir in apples.
  4. Spoon batter into prepared muffin cups and bake for 15-20 minutes or until muffins pass the toothpick test.
  5. Allow muffins to cool on a wire rack for five minutes.

Serve with:

–          Fruit

–          Homemade orange juice

–          Eggs and bacon

Kid friendly tips:

–          My kids LOVE muffins which is why I love this recipe. I know that they are getting oatmeal and whole wheat which is much more filling and healthier than white flour or a boxed muffin mix from the grovery store.

Other fun breakfast ideas:

–          Every Saturday morning is pancake morning at the Monk household. In fact, if I make pancakes during the week now, Hannah says “Happy Saturday mommy!” I just use the super easy bisquick mix and then sauté bananas in the same pan that I used for the pancakes. The kids love helping me make the pancakes and it is a fun way to spend the morning.

–          We just bought a juicer. It is a great way to start the mornings and to sneak a vegetable or two into the kid’s morning juice! Yesterday morning we made Orange, apple, banana and carrot juice. The kids loved it!
